Vegetable Bolognese w/ quinoa pasta
Vegetable Bolognese
Ever since moving toward a plant based lifestyle, Bolognese has been a go to dinner for us.
It’s so easy, can be made a hundred different ways, and is devoured by all (including hungry 3 and 5 year old’s)!
Recipe + Guide below (use as many organic or non GMO ingredients as possible)
2-3 heads of broccoli (chopped)
5-7 mushrooms (diced)
5 cloves of garlic (diced)
1/4 cup olive oil + 1 Tbs
salt and pepper to taste
handful of fresh oregano
1 28 oz can crushed tomato’s
1 1/4 cups veggie broth or water
1 bag of quinoa pasta (or brown rice)
10 whole basil leaves
2 Tbs of hemp hearts
Guide:
Preheat oven to 400 degrees F.
Chop broccoli, toss with olive oil + salt + pepper and place on baking sheet.
Roast broccoli in oven for about 15-20 min.
In a large deep skillet heat 1/4 cup olive oil + salt + pepper (med heat).
Add the garlic, stir and saute till fragrant (30 seconds).
Add the mushrooms and stir.
Add the oregano and stir.
Add the tomatoes and veggie broth (or water) and stir to combine.
Bring to a boil, uncovered.
Lower heat and simmer for 15 min.
Add the basil leaves (whole) + hem hemp hearts.
Simmer for another 15 minutes.
In the meantime, cook the pasta according to the package directions. Drain, add a little sauce, and set aside.
Once the sauce thickens and all flavors are combined, turn down to low and serve over a bed of the pasta.
** less is more with the pasta! The sauce alone is hearty and delicious, you don’t need a lot of pasta **
** sprinkle additional fresh herbs on top such as basil, oregano, parsley and more hemp hearts **
